Cambridge Sausage Premix is the easy way to make a traditional sausage in either beef or lamb.
To make you will need
36 Kg Meat (we recomment 20% Fat Content)
4.5 Kg Cambridge Sausage Premix
7.5 Kg Iced Water
Makes a 48 Kg Finished Block
(Use above ingredients in the same ratio regardless of pack or batch size).
Method
1. Mince fresh meat through a mediam mincer plate.
2. Mix premix and the water. Mix this thoroughly with the minced meat.
3. Mince again (through a finer plate if desired).
4. Refrigerate as soon as possible. Allow sausages to ‘set’ overnight before cooking or freezing.
